This 'brilliant' idea came when we were super out of cash and payday wasn't for another couple days and all we had in the fridge was spaghetti sauce and tortillas.
2 small flour tortillas
1/2 mozzarella cheese, shredded (or Italian blend)
Parmesan cheese
1/2 spaghetti sauce
butter or margarine
garlic powder
parsely
'Fancy' options:
crumbled Italian sausage
ground turkey/beef
chicken pieces
deli turkey/salami/proscuitto
1. Spread one side of a torilla a place butter side down in heated skillet.
2. Top with cheese and any 'fancy' options you can dream up, then top with more chese to act as 'glue'.
3. Sprinkle with parsley (fresh is better, dried works too--also oregano or Italian blend seasoning) and a little garlic powder.
4. Butter one side of remaining tortilla. Place butter side up on quesadilla. Spinkle outside with more garlic powder (or garlic bread sprinkle).
5. When bottom tortilla starts to get golden and cheese begins to melt, flip quesidilla over in skillet. Sprinkle Parmesan cheese on top while still hot.
6. Cook until both totillas are golden.
7. Heat spaghetti sauce in microwave. Cover it with a paper towel or plastic wrap to avoid splatter.
8. Cut tortilla into 6 pieces, dip and enjoy!
Total time: Under 10 minutes!
